Pico de Gallo

Pico de gallo is probably the best thing that ever happened to fresh, ripe tomatoes.  Even people (like my kids) who claim they don’t like tomatoes, love pico de gallo.  It is simple, flavorful and only requires a few ingredients.  It is easy to adjust the spiciness – leave out the jalapeño altogether for a truly mild pico or add whatever amount of whatever pepper you want to really turn up the heat.  Jalapeño is the traditional choice and the flavor is great with the fresh tomato.  Make a little or a lot, it goes on anything and everything or is great with just tortilla chips and a cold beer.

tomatoes

1 cup seeded, diced tomato 

1/3 cup diced onion

2 tbsp chopped cilantro

2 tbsp seeded, small dice jalapeño, 

1 1/2 tbsp minced garlic

1/2 ea lime, juiced, about 1 tablespoon

1 tbsp vegetable oil

1 1/2 tsp salt

Almost pico

Mix together.

Pico de Gallo

Let the flavors come together, about 15 minutes, or until you can’t wait any longer!
